You're very smart to use the large beets; I threw mine away :( But I had enough to can 12 quarts and 12 pints anyway. They'll add so much punch to a winter's meal!
That's sad that you threw them away. Mine still taste amazing. Not strong or bitter. Here in Southern California, we have two growning seasons. Next time I plant, I want to try more of the varigated color varieties. I haven't been canning the beets, just doing small batches of pickled beets every week to eat as a side or with salads.
