A recipe for kimbo2003

Easy Blackberry Banana Bread

1/2-3/4 C. Sugar

1/2 C. Shortening or Margarine

2 Eggs

2 C. Flour

1 1/2 t. baking powder

1/2 t. baking soda

2 Bananas, mashed

1 1/2 C. blackberries, frozen or fresh (if using frozen, thaw first)

1/2 C. chopped nuts (walnuts or pecans)

Turn oven to 350 degrees.  Grease and flour one loaf pan. 

In medium size mixing bowl, cream together sugar, shortening and eggs with electric mixer on medium-high speed.  Add flour, baking powder, baking soda, bananas and nuts.  Mix again with electric mixer until ingredients just come together.  With large wooden spoon, fold in berries gently.  If you're rough, the bread will be very dark from berry juice.(If you use frozen berries, they hold together better and do not discolor batter.)  Spoon batter into prepared loaf pan.  Bake for one hour.  This bread may be served hot or cold.  (I like it warm with lots of butter!)

*May also substitute frozen Raspberries with great results. 

*This recipe is easily doubled.

Imitation Orange Julius/Jamba Juice

3 C. orange juice (already prepared style not frozen concentrate)*

1 envelope DREAM WHIP*

1 (3.125 oz.) package dry, instant vanilla pudding

3 C. orange juice (already prepared style, not frozen concentrate)*

Pour 3 C. orange juice into a blender.  Add 1 envelope DREAM WHIP and one envelope vanilla instant pudding.  Blend 1 minute on low then medium-high 1 minute.  Pour this mix into a 2 qt. pitcher and add 3 C. orange juice.  Stir well.  Serve over finely chopped ice in large glass with a straw.

**I used a combination of juice.  For the last 3 C. we tried a prepared blend with a combination of mango, banana, carrot, grape and orange juices.  Delicious!!

The DREAM WHIP is sold in the isle with pie fillings and cake mixes.  It comes two packages to a box.

Ok, I tried the crockpot lasagna and it was good, but next time I will double the mozarella cheese, add more cottage cheese and more noodles, plus two large cans of olives (sliced).  I only added one can of olives and my family likes more than that.  I used Del Monte traditional spaghetti sauce and it was a little too sweet for my taste, but the family liked it.  All in all it was good, but not cheesy enough and it needed more noodles.  It was a good meal with garlic bread and salad.
