Thinking about all those things to do.

I am thankful...
Thankful to have my niece Joy here to stay with us for a month.  I get to experience all things GIRL-IE and I am thrilled!

From the learning room... Two students for the next month.  We'll see how much we get done together.  We're studying this morning.  This afternoon we're relaxing.

In the kitchen...
I am thinking of making a simple chicken Parmesan for dinner with a stuffed pasta shell and BIG, green salad.



Easy Chicken Parmesan
  • 1/2 cup Hellmann's® or Best Foods® Real Mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
  • 4 tsp. Italian seasoned dry bread crumbs
INSTRUCTIONS
  1. Preheat oven to 425°.
  2. Combine Hellmann's® or Best Foods® Real Mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.
  3. Bake 20 minutes or until chicken is thoroughly cooked.

I am wearing...
I am wearing jeans, orange long sleeved tee, and warm winter cardigan over that.  My hair has been washed but has taken it's own path to styling.  A few more inches of growth, and it should co-operate a bit better.

I made 4 craigslist ads this week.  I love craigslist!  It's a nice FREE service.

I also made print out 'spec' sheets for all three vehicles to post in their windows.  We took our truck and tent trailer down to McGuire Air Force Base to park on their 'For Sale' lot  Tuesday afternoon.  We had people looking at them before we even parked them!

We may take the van down to the Air Force Base next week.


I have been going...
We've spent the last two days driving around in the van.  We drove into the city Tuesday to get our niece Joy from the airport.  We drove drove to the AFB.  Yesterday, we almost drove to Connecticut to look at a truck.  It had been sold, so we drove to Pennsylvania instead and looked at this beautiful truck . . .

(I've been having bowel problems related to hormones and stress.  It's not fun.  I want the Lord to take them away!) Praying for far away family.  Praying for my children.

I am reading/watching...
  I am reading two Jane Austen Mysteries by Stephanie Barron.  I LOVE them.  They are books written as mysteries from Jane Austens' perspective by the author Ms Barron.




Around the house... Around the house, my kitchen is clean.  My house is fairly dusty.  I'm going to burn a vanilla scented candle soon and watch HGTV.

One of my favorite things... Buffet food.  Our drive yesterday took us through Lancaster County, Pennsylvania.  We found Shady Maple Smorgasbord, featuring Pennsylvania dutch cooking, on the GPS and spent TWO hours here, eating and visiting the gift shop!  The food, atmosphere and restaurant were LOVELY!  I sampled a dish called "Pig Stomach"  it was a type of casserole with bits of 'meat' that I assume were stomach.  Here is the definition of pig stomach on wikipedia ~ It is made from a cleaned pig's stomach traditionally stuffed with cubed potatoes and loose pork sausage. Other ingredients include cabbage, onions, and spices.  Just so you know, it tasted like liver casserole.




A few plans for the rest of the week:
We're trying to surprise Joy with an educational trip to Washington, D.C. this weekend.  I am excited to spend the weekend with our friends Chris, Sharon and baby Anastasia.  Saturday, we'll enjoy the free museums.  We'll be staying in a hotel, that's always a treat for me and #2 son.  I'll post pictures on our return.

Something to share...  I'll try to be better the next few weeks taking pictures.  I did snap this one as we drove by the Amish men placing fence posts.

  2. now i'm confused. or curious. maybe it's both! i was thinking that eli's sister lived...well. i'm not sure. new england i think. but yesterday your drive took you within an hour of me. my grandparents owned the little farm across from shady maple till grandma died in '07. i have The Best memories of that place, i feel like you just took me on a trip down memory lane. thanks. :)i never tried that famous pa dutch dish though! good for you for being so brave! and enjoy d.c....another fav place of mine! happy weekend to you too.

  6. long sleeve tee here too!!! I just got out of a nice HOT bath..... I was so cold, I had to in order to get warm!!EEWWW!!!!! PIG STOMACH! You always seem to be the daring one!!!I really enjoyed your pics and I hope you get to enjoy your time with your niece. Most of all.....I hope you get to feeling better too. I finally am.Tell Sully hello!!!!! When I was moving things around the other day, I found a couple of legos that got away from him and got under some furniture. I just had to sit and think.......and wish you were here again!.

Enjoy your time with Joy, how fun, a whole month!  I love Lancaster, PA......I love the buffets too but I know I would never be brave enough to try pig's stomach- ewwwLove the truck,just looking or are you serious about it?  Thanks for sharing the pix, they are great.  Have a wonderful time in DC.  Very educational!

  8. @oldfatgramma - pretty serious about a newer truck.  We sold our little Mazda last night.  Just have the van left.  That truck is wwwaayyy expensive.  Not sure what hubby will decide.

  9. How much are you asking for the pop up camper? We've been talking about buying one for awhile now. Ok, I just gotta say...............there is NO WAY I could eat pig stomach! You are so brave!   10. wish we could buy the tent camper.. i've always wanted one.i'm not opposed to camping - - i just like doing INSIDE of something cozy, and SAFE!! ;)i have great memories camping growing up.. but it was always in a camper.craigslist is awesome. i miss it here.here we have kijiji. how's THAT for a name!! haha.we did buy our family room furniture on it - but craigslist has more options.hope you enjoyed your trip to D.C. i loved my visit there and hope to go back someday...maybe in a tent camper with the kids!!! ;)
