~~Terrific Tuesday~ With Recipes!!

am re- posting my recipes for Cheese Noodles and Mom's Barbecue Meatballs.  This is what we are having for dinner!  Yum, I can't wait, so tasty!



Cheese Noodles

  • 1 cup cottage cheese
  • 1 cup sour cream
  • 1/2 grated onion
  • 1 teaspoon Worcestershire sauce
  • 1/2 to 3/4 teaspoon garlic salt
  • 1 (6-ounce) package very fine egg noodles, cooked to pkg directions (just under al dente!)
  • 1 cup grated Parmesan

Directions

Preheat oven to 350 degrees F.

Mix together cottage cheese, sour cream, grated onion, Worcestershire sauce and garlic salt. Add noodles and place in greased casserole. Sprinkle top with grated Parmesan cheese. Bake for 45 minutes.

**This is a great and easy recipe.  It may be hard to find these noodles.  They are very fine.  Like the ones in envelopes of chicken noodle soup.  Look on the pasta isle.  I've also found the noodles need to be cooked to just under al dente.  It taste better when the noodles are not soft.



Mom's Bar Be Que Meatballs

3 pounds lean hamburger
2 c. oatmeal
2 eggs, beaten
2 T. salt
1/2 t. garlic powder
2 T. chili powder (optional)
1 c. diced onion
1 small can evaporated milk
1/2 t. fresh ground black pepper

Mix all ingredients together and form 12 baseball size balls.  Place into 9x13 pan.  Meanwhile make sauce...
Sauce
2 c. catsup
1 c. brown sugar
1/2 c. diced onion
1/2 t. minced garlic
2 T. liquid SMOKE
Mix these ingredients together and pour over top of meatballs and bake at 350 degrees for 1 hour.

((okay...left like it is, this recipe makes a ton.  For the meatballs I usually use just 1 pound of hamburger and make 1" meatballs with it.  Any meatball recipe will work great.  The chili powder is what gives the meatballs the flavor to go with the sauce.  And for the sauce, even cut in half it is a lot.  The secret to the sauce is the liquid SMOKE.  My Mom used to make these as a picnic food.  They are excellent with potato salad and chocolate.  This recipe makes me think of her when I make it...awww ))

Easy Lemon Poppy Seed Cake

Preheat oven to 350F. In a large bowl, “dump and mix” a box of lemon or yellow cake mix, a small box of instant vanilla pudding, four eggs, 1/2 cup vegetable oil, 1 cup warm water, 1/4 cup milk and 1/4 cup poppy seeds. Pour into a well-greased Bundt pan, bake for an hour. Cool 10 minutes, turn onto a plate. While still warm, drizzle with a glaze of 3 tablespoons lemon juice and 6 tablespoons powdered sugar.

  1. Looks delicious but then again I have the problem of needing gluten free.  Maybe I can try the cake with a GF cake mix but the noodles are kinda out

  3. @oldfatgramma - Every time I'm in the store I see new products being added that are GF!!  You can make meatballs and the cake!  What do you use for noodles?  Do they make a good rice noodle?

  4. @victoriantomboy -   It's stormy here today.  We got the weather you had yesterday!  It's dark, windy and stormy.  A good day for comfort food!

  5. @betheelou - They do make rice noodles, however, they taste like rubber bands!    But the cake and meatballs are definitely worth a try!
