~~Terrific Tuesday With A Recipe~~

 

Cranberry Cherry Pie Recipe

(Cherry pie is one of my favorites.  This looks like a good recipe using a canned cherry pie filling and tart cranberries.  My mouth is watering already!)

Cranberry Cherry Pie

Ingredients

  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 can (21 ounces) cherry pie filling
  • 2 cups cranberries
  • Pastry for double-crust pie (9 inches)
  • Milk and additional sugar

Directions

  • In a large bowl, combine sugar and cornstarch. Stir in pie filling and cranberries. Line a 9-in. pie plate with bottom pastry; trim to 1 in. beyond edge of plate. Pour filling into crust.
  • Roll out remaining pastry to fit top of pie. Cut slits in pastry or cut out stars with a star-shaped cookie cutter. Place pastry over filling; trim, seal and flute edges. Arrange star cutouts on pastry. Brush with milk and sprinkle with sugar.
  • Cover edges loosely with foil. Bake at 375°for 55-60 minutes or until crust is golden brown and filling is bubbly. Cool on a wire rack. Yield: 6-8 servings.

Sweet Potato Muffins Recipe

(I'm going to try this recipe but substitute pumpkin for the sweet potato)

Sweet Potato Muffins

Ingredients

  • 2 cups self-rising flour
  • 2 cups sugar
  • 2 teaspoons ground cinnamon
  • 1 egg
  • 2 cups cold mashed sweet potatoes (without added butter or milk)
  • 1 cup canola oil

  • GLAZE:
  • 1 cup confectioners' sugar
  • 2 tablespoons plus 1-1/2 teaspoons 2% milk
  • 1-1/2 teaspoons butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Directions

  • In a small bowl, combine the flour, sugar and cinnamon. In another bowl, whisk the egg, sweet potatoes and oil. Stir into dry ingredients just until moistened.
  • Fill greased muffin cups two-thirds full. Bake at 375° for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. In a small bowl, combine glaze ingredients; drizzle over warm muffins. Yield: 2 dozen.

Creole Beef Casserole Recipe

(I love hashbrown casserole.  This is a way to make more of a filling meal than a side dish.  I can't wait to try this!)

Creole Beef Casserole

Ingredients

  • 2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
  • 2 cups (16 ounces) sour cream
  • 1 small onion, chopped
  • 1/4 teaspoon pepper
  • 1 package (30 ounces) frozen shredded hash brown potatoes, thawed
  • 2 cups (8 ounces) shredded cheddar cheese
  • 1-1/2 pounds ground beef
  • 1 cup ketchup
  • 1/4 cup packed brown sugar
  • 3 teaspoons Creole seasoning
  • 1 teaspoon garlic salt
  • 1 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 3/4 cup crushed cornflakes
  • 1/4 cup butter, melted

Directions

  • In a large bowl, combine the soup, sour cream, onion and pepper. Stir in potatoes and cheese; transfer to a greased 3-qt. baking dish.
  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the ketchup, brown sugar and seasonings; spread over potatoes. Combine cornflakes and butter; sprinkle over top. Bake, uncovered, at 350° for 40-45 minutes or until bubbly. Yield: 8 servings.

Monday~  Salisbury steak with mushroom gravy, roasted vegetables (potato, sweet potato, onion, cauliflower, turnip), green salad

Tuesday~  Taco's

Wednesday~  Grilled cheese sandwiches and Tomato soup

Thursday~  Spaghetti squash with chorizo, dinner salads, fruit salad

Friday~  Make your own pizza with homemade crust and coca colas

Saturday~  Waffles for breakfast,  Mexican Chicken Soup with cornbread for late lunch

Sunday~  Baked Ham, Scalloped potatoes, green beans, cole slaw, dinner rolls, Chocolate Tiramisu Cake

  • Company is coming late Friday.  They'll stay here over the weekend.  We'll take them to the city Sunday afternoon.  My sister in law and I, will take turns going back and forth to visit each other during the week.  I think I'll take Tuesday and Thursday that way #1 son can go with me as well and #2 son will not miss piano lesson on Wednesday.  On Friday my manly man will hopefully take the van to work and pick up our company and bring them home with him.  They'll stay the night and fly back to Missouri on Saturday afternoon, October 30th.  We'd like to go on a double date to see a Broadway show but it's looking as if the only day to do that would be this Saturday evening.  We'll see.  I'll be sure to take lots of pictures of their visit.
  • Missed a date with Alison and Sienna last week because of my two guys with colds.   I may try to do that again this week if there is time.
  • Got lots of little projects going on this week.

~~It's Friday~~


Outside My Window~   Sunny.  I believe that we're in the calm before the storm.   The wind is really supposed to start whipping later today.  The stores were experiencing a run on customers early in the day yesterday.   I heard it's because folks like to stock up when they think there is going to be a big storm.  The trees in my yard are starting to change.  I love those Maple trees.





From The Learning Room~   Lots of big words with many vowels.  Addition and subtraction and spelling.



I Am Wishing~  For me wishing and praying are almost the same.  I am wising we could go back to California.  I am wishing that the next 18 months will go by fast.  I am wishing that the next job rotation will have good selections on it.  Still thinking about a big Dodge truck and pop up trailer. 
  
I Am Wearing~  Fall colored tee with khaki capri's bare feet but it's a bit chilly.  I may have to go put on socks and slippers!

 I Am Creating~  I bought some wood planks for painting.  I have one wedding present to craft and one for my sister in law to give as a gift when she gets here.  I am making her a basket of things we picked up in Vermont.  I'll take a picture of the finished basket for you to see.

I Am Praying~  Praying very hard for #1 son.  He heard from the CG recruiter yesterday.. . his boss (recruiters boss) gets to pick the final selections from the applicants.  Be praying that my son's will stand out and he will be selected!
Praying for wisdom.  Praying for the desires of my heart.



Around The House~  It's clean.  It's presentable.  Maggie's parents will be here to share Sunday afternoon with the bachelors and us.  I am making french toast.  Hopefully we'll all be well.  Manly man and #2 son seem to be coming down with whatever is being passed around at church.  FUN!!

From The Kitchen~  I may get to go on a date tonight with my manly man.  Pizza.  If there is no date, leftovers from the kitchen for tonight.

I Am Enjoying~  I am enjoying these fall days.  I was just thinking it's good fire pit time.  The sunny days and chilly nights are just perfect.  I put my flannel sheets on the bed and it's so cozy to be wrapped in their warmth!  Watched Sound of Music last night.  What a great show!

One Of My Favorite Things~  Babies !!  I was happy to have little Miss Ariya here yesterday to play with us for a few hours.  She was a joy.  She seems to be outgrowing the separation anxiety she had over the summer.


 I Am Sharing~ Not sure what is good to share this week.  I was looking through an old hymnal at church the other day and these verses caught my eye.

We enjoyed a family holiday today.  Thank You Christopher Columbus!

No Menu today.  I'll post one tomorrow.  Back to the school routine in the morning.

~~It's Thursday~~




(This is a picture for my dear, sweet sister who says she doesn't see enough photos of me!)

Outside My Window~  It is supposed to be warmer today, about 72 degrees.  It has been cloudy, cold and rainy since we returned from our week away.

From The Learning Room~ A light day today.  I am on vacation this week with my husband.  He read a library book to Dad and practiced piano lessons.

I Am Wishing~  For a new laptop, for my husband of course!  A new tower for my desktop computer.  A new wardrobe from Christopher and Banks and Coldwater Creek to go with a new haircut I am thinking dreaming about.
 
(I don't think my manly man likes this hairstyle.  A few of the ladies at church have ones similar and he doesn't care for the hairstyle on them.  Mine would have bangs, that's a given.  And I am not 30 pounds underweight with big brown eyes so I just wouldn't look the same)


I Am Wearing~  Blue jeans and a long sleeved pink tee shirt.  I spent about an hour on my pedicure this morning.  A french one.  Looks pretty good from far away. . .



I Am Creating~  My Wal Mart is undergoing remodeling.  The photo department is closed until November.  Because of that,  my photo album updating has slid to the back burner.  I still need to get a wedding present done, maybe stitch a baby blanket.  I want to craft myself a chunky necklace also but do not have the right supplies for necklaces yet.

I Am Praying~  Praying for wisdom as always.  Praying for church.  Our Pastor's and their families.  Praying for wisdom and guidance for my in laws who are experience their first growing pains with a teenage son.  Praying for my family in Washington and Oregon.  Praying for my father in law this week as well.  Praying for the desires of my heart.

Around The House~  A load of whites in the wash.  Grunting sounds from the back yard where a manly  exercise program is taking place.  Peaceful music playing.  It's a bit chilly here at the desk.

From The Kitchen~  Chicken Enchiladas tonight.  I am trying to decide if I want to make homemade corn chips to go with the meal.  I probably will since they are so great tasting!


(This was our dinner from the other night.  That real maple syrup sure is sweet.)



I Am Enjoying~  Watched a cute movie about the Coast Guard over the weekend.



I get a kick out of watching these older shows and seeing all the amazing cars that do not exist anymore.  This one had a wonderful 1969 Toyota Carolla and many VW Bugs.  Of course, the California scenery is good at any time.



Oh, Rock Hudson, you were a handsome man.  What a waste!
