Wednesday~ Chicken and Shrimp Pancit, egg rolls, wontons 

Thursday~  Baked Potatoes with big green salad

Friday~  Meatloaf, macaroni and cheese, fruit and cottage cheese, peas and corn, chocolate brownies

Saturday~  Bisquicks Easy Cheeseburger Pie with broccoli

Sunday~  Split Pea with Ham Soup, cornbread, Spice Cake with maple sugar drizzle

~~It's Thursday!~~

 


Outside My Window~  Not a bad day.  Happy Veterans Day!  I am enjoying the day off with my veteran. . .  he is off work today for the holiday.



Around The House~   #2 son made all our beds this morning.

He brought in all his pillows and babies and his fuzzy cuddle blanket.
His bed looks empty.

I Am Praying~  Praying for wisdom as always. Praying about the church search we started last week.  I know there is no such thing as a perfect church.  We'll be trying to find something for the time we have remaining here.  We are at peace that we made the correct decision to leave.

I Am Wearing~  Jeans, a long sleeved red tee, my tennis shoes and my hair is in a pony tail.

I Am Creating~  Nothing in the creating department this week.  I need to get a rough draft completed for our annual Christmas letter, get the pictures ordered and order address labels.



  From the Kitchen~  I made a fresh fruit platter and egg sandwiches for breakfast.  We went out for Chinese food at lunch time.  My men have declared NO DINNER tonight after eating a late lunch.  Bachelors coming tomorrow.  My manly man wants pizza.  Saturday?  Sunday is Soupa Tuscana with homemade bread.

I Am Enjoying~  My date with my two guys at the mall.  We walked through Sears and a few other stores.  The whole purpose of the trip was to check out the $19.99 St. John's Bay corduroy pants  JC Penny had for both men and women.  We got two pair for my manly man in navy and brown.

One Of My Favorite Things~  Dates at home!  We got school work done yesterday by 10:30 a.m.   We ran to the store really quick and spent the rest of the day having a pajama date on my bed.  We watched several movies.  We enjoyed Hot and Sour soup, cracker and cheese and sparkling cider.  It was so much fun!

Terrific Tuesday Recipes


By request I am posting my Sour Cream Mennonite Chicken Recipe.  This recipe was given to me by my sweet sister, onehappymomma.  We like it with Rice A Roni but it would be good with wide egg noodles.  I've seen other recipes for Chicken Paprika that are very similar to my recipe.

Sour Cream Mennonite Chicken

1/2 c. butter
1/4 flour
2 t. salt
fresh cracked black pepper
paprika to taste
1/2 c. water
2 T. flour
1 c. sour cream
fresh chopped parsley
4 boneless, skinless, chicken breasts cut in half lengthwise

Melt butter in large skillet. In shallow dish (pie pan or plate) combine  flour, salt, pepper.  Stir to combine.  Coat chicken with flour mixture dip in melted butter to coat all sides.  Sprinkle each piece of chicken generously with paprika.  Cook chicken in skillet on medium heat until chicken is browned.  Remove from skillet, keep warm.  Add water to skillet drippings, using wooden spoon, loosen brown bits from bottom of skillet.  Meanwhile, blend 2 T. flour into 1 c.sour cream.  Add sour cream mix to skillet.  Blend well.  Add a dash more paprika.  Remove from heat.  Add chicken pieces back to skillet.  Spoon gravy over chicken.  Sprnkle again with salt, pepper, parsley and paprika.
*this would be good with mushrooms added also!

Sour Cream Chicken Paprika Recipe


Chicken Paprika

Ingredients

  • 4 skinless, boneless chicken breast halves
  • 1 1/2 tablespoons vegetable oil
  • 1 cup chopped onion
  • 1 1/2 tablespoons butter
  • 2 tablespoons paprika
  • 1/2 teaspoon salt
  • 2 cups chicken stock
  • 1 teaspoon all-purpose flour
  • 1 (8 ounce) container sour cream

Directions

  1. You can leave breasts whole or cut them up, whatever your preference. In a large skillet, heat oil over medium-high heat. Add chicken and pan-fry until cooked through and juices run clear, about 10 minutes. Remove chicken from skillet and set aside.
  2. Using the same skillet, cook onion in butter until translucent but not brown, about 5 to 8 minutes. Season with paprika and salt. Pour chicken stock into the pan, and bring all to a boil. Reduce heat to simmer; mix flour with sour cream until smooth, then whisk into chicken stock. Place chicken in skillet; simmer until chicken is heated through and sauce has thickened.

~~It's Thursday~~



Outside My Window~  Outside my window it's rainy and it's cold.  I think winter has arrived in NJ.  I wore my heavy winter coat twice this week.  The rain will make the leaves come off the trees even more.  If you saw my facebook page, you'll know my front yard was busy on Monday night when an out of control car drove through our yard.  He took out a road construction sign, our trash cans and hit the back fender/quarter panel/tail light area of my husbands police/work car.  The out of control car ended up two houses down and across the street.  His car came to a stop after hitting a power pole.  Would you believe, he walked away from the accident?  He did.  AMAZING.  He told the police he thought something jumped out in front of him.  We wonder if he was asleep, or his phone jumped in front of him.  It was exciting to say the least.  We do not let our young son or our dog play out in the front yard just because of the terrible traffic out there.  I was wishing the other night I would have taken pictures.  Sorry, no pictures!

Around The House~ My house is quiet and put together.  I need to run the vacuum around here and there.  We are starting to track leaves inside from the outside on our shoes.  Smelling a good candle. . .'Spice Cake' from the Wal Mart BHG collection.

I Am Praying~  May I say, I am still happy and rejoicing over two answered prayers this week.  I think it's amazing that God will give me something I've been praying for and show me clearly that he answered my prayer.

Philippians 4: 6-7  "Be careful for nothing; but in every thing by prayer and supplication with thanksgiving let your requests be made known unto God.  And the peace of God, which passes all understanding, shall keep you hearts and minds through Christ Jesus."

I Am Wearing~  I am sporting a new haircut!  I got my sister in law to trim about 3 inches of the length of my hair and shape it a bit.

Tuesday~  Kielbasa with barbecue sauce, hash brown casserole, fried cabbage,  maple glazed pumpkin muffins

Wednesday~ Taco's

Thursday~  Parmesan Baked Cod, Rice a Roni, Broccoli

Friday~Alfredo Roll ups, Rosemary bread, green salad

Saturday~ Tomato Soup, grilled cheese sandwiches

Sunday~  Beef Stew, buttermilk biscuits, apple crisp with ice cream

  • If you could have seen me this weekend . . . I am so happy for my son.  I am rejoicing that the Lord answered our prayer and gave me such clear evidence that he answered my prayer.  It just tickles me to no end!  . . ."for your Father knoweth what things ye have need of, before ye ask him."  Matthew 6:8b  . . . "Ask, and it shall be given you; seek, and ye shall find; knock, and it shall be opened unto:  For everyone that asketh recieveth; and he that seeketh findeth; and to him that knocketh it shall be opened."  Matthew 7:7-8
  • A different chapter will be opening in our house shortly.  I am excited about it all.  I think my manly man is hesitant and wonders where the time went.  Our children grow up too fast!
  • I think we'll be driving to Missouri to spend Christmas there.  I also think we are going to ask a certain young lady to join us there!
  • Back to the routine this week.  We have a bit of school to get through.  Last week we had off and it was not in the schedule!
  • Missions Conference at church Wednesday-Sunday not sure how much we'll attend.
  • Keep praying about wisdom.  I am not able to share what's going on with us but something needs to happen and it's not in my control.
  • Remember the cherry cranberry pie I posted the recipe on?  We tried it last Sunday with our ham dinner and it was a great recipe!  It was just tart and sweet enough.  Not too runny!
