~~Menu Monday~~





Monday~  easy taco's

Tuesday~  chicken kiev, rice a roni, garlic snow peas

Wednesday~  Sloppy Jo Casserole, fruit and cottage cheese

Thursday~  Maple grilled salmon on a fresh green salad

Friday~  barbecue meatballs, cheesy noodle casserole, green beans, easy peach cobbler

Saturday~  Tomato soup and make your own sandwiches

Sunday~  Fried chicken, collard greens, mashed potatoes, sauerkraut, gravy, fruit, chocolate tiramisu cake

You're going to have a lot of company for Sunday dinner.  This is one of my fav's that you make.  Oh I wanted to ask if you've picked out a curriculum for next year.  There is a big home school conference not too far from here in April that I want to go to.  I want to be able to look at the ones that I'm interested in and see how it will work with two students.I got a letter off to your recruit today.  How's he doing?

  4. I should have known better to come here when it's almost 1am and I'm starting to get hungry!!  I'm no longer starting - I am now hungry! Oh my - Friday's meal I'd love to sit at your table! Can you help me out...Sunday I'm having seven guests....will be serving turkey, sweet/sour green beans, brown buttered carrots - BUT I'm stuck what kind of potatoes to make. I'm tired of my cheesy potatoes. The last time I made mashed potatoes (which I love) I was so uptight till it was time to serve my meal. They are pretty much work at the last minute and then to try to keep them hot is a problem for me. I'd love to know if you have any suggestions!

  5. @threejoys - why not just baked pototo with butter and sour cream?  you could also make dressing(stuffing)and skip a pototo. Or do a Rice a Roni with wild rice in it.  I've also made mashed potato and kept them in my crock pot, I have a warm setting.  They keep pretty well that way until after church when your ready to eat.

  6. @jessnboyz - I'm really thinking of going back to Landmark's Freedom Baptist Curriculum www.landmarklfbc.com Aaron seems very happy and very busy.  I can't wait to attend graduation and hear all his stories.  His letters have been too short so far!

  10. Good Morning Betheelou, I am getting back to you about the potatoes I made on Sunday. I tried a Roasted Potatoe Recipe. I have never done that before even for Nevin and me. The kitchen smelled wonderful!  I grew up with Pa. dutch cooking and still tend to cook that way so I don't use many spices, especially not garlic BUT we like it in other cooks' meals if it is not extra strong. This recipe called for garlic salt and thyme with some lemon juice and olive oil. You combine all that and toss over red skin potatoes and just bake them. We really enjoyed that!  You mentioned you sometimes will make mashed potatoes before church. When my mashed potatoes cool a bit they want to get "thick" - I'm not sure quite how to explain it. Do you add extra milk when mashing them in the morning to prevent that? I really enjoy serving mashed potatoes but have found that mashing them at the last minute for a group of 14-16 which I normally have when inviting guests, is just too much stress. ~Blessings on your Thursday

  11. @threejoys - Yes a bit extra milk, then just dump them in a crock pot and set it to warm.  I found any higher of a temp cooks the edges too much.  No one complains though!Have you tried potato wedges, such as small reds, tossed with a mix of 1/4 c. oil and a pkg of Lipton onion soup mix, bake at 400 till pots are done?  It is one of our favorites and is so easy.We love garlic.  I put it in everything!  Makes your breath stink but is supposed to be good for the blood.I'm sure your suppers make everyone happy no matter what you fix.  I can't see you being stressed either, you seem so calm and easy going
