Menu on Tuesday



Monday-  Cheesy Broccoli Soup, Dinner Rolls

Tuesday-  Kung Pao Chicken with vegetables and brown rice

 

Wednesday-  Easy Chicken Parmesan with pumpkin macaroni and cheese, dinner salad, garlic rolls

Thursday- Salisbury steak with onions and mushrooms, onion roasted potato wedges, carrots and peas, dinner salad

Friday-  Camping~  Hot Dogs

Saturday-  Camping~  Chili


Sunday- Camping~  Beef Stew


Monday-  Easy Enchilada Casserole (with sour cream and salsa on the side)

Tomorrow I'll be busy in the kitchen making some casseroles to put in the freezer.  With teaching school taking up a lot of my time, it's so nice to pull something from the freezer. . . (that I prepared )  This is what I'll be throwing together tomorrow to put in 8x8 EZ foil pans to put in the freezer~

Tator Tot Casserole (X2)
Hashbrown Casserole (X2)
Green Enchilada Casserole with shredded chicken
swedish meatballs with extra sauce
Ham and Swiss Noodle Casserole
Tuna Twist Casserole
Mom's Barbecue Meatballs with sauce
Cheesy Noodle Casserole
Stuffed Jumbo Pasta Shells
Pumpkin Macaroni (X2)

Columbus Day is a Federal Holiday. . .so we have a three day weekend.  We're planning one more camping trip (at least) before it gets too cold.  We'll leave after my husband gets off work, early Friday afternoon and return late Monday afternoon.

  1. Menu looks great, especially tonights......we are having that tomorrow, salsibury steak tonight.  You certainly are ambitious to tackle all those meals for the freezer on a school day.

OK - I need the pumpkin macaroni recipe as well as the kung poa chicken recipe.  Your menu sounds wonderful!!BTW ~ I found a couple recipes again in my once-a-month cookbook.  Chinese Chicken morsels & teriyaki chicken (strips rather than whole).  I put both in the freezer.  Ended up pulling the teriaki chicken out because things came up and I needed a quick fit meal.  It was wonderful!!   Having something ready to go in the freezer is SO nice!!
